Sushi Rice

Salmon and Fillings

Method

Prepare the Sushi Rice

  1. 1

    Rinse the Rice

In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear to remove excess starch.

  2. 2

    Cook the Rice

In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium heat, then cover and reduce the heat to low. Cook for 20 minutes, or until the water is absorbed. Remove from heat and let it sit covered for 10 minutes.

  3. 3

    Season the Rice

In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice using a wooden spoon. Allow the rice to cool to room temperature.

Prepare Fillings

  1. 4

    Slice the Salmon

Thinly slice the fresh salmon fillet into strips.

  2. 5

    Prepare the Cucumber

Cut the cucumber into thin matchstick-sized strips.

  3. 6

    Slice the Avocado

Cut the avocado in half, remove the pit, and slice it into thin strips.

Assemble the Sushi Rolls

  1. 7

    Lay Out the Nori

Place a bamboo sushi mat on a clean surface and put a sheet of nori on top, shiny side down.

  2. 8

    Spread the Rice

Wet your hands to prevent sticking, take a handful of sushi rice, and spread it evenly over the nori, leaving about 1 inch at the top edge.

  3. 9

    Add Fillings

Arrange a few slices of salmon, cucumber, and avocado in a line across the rice, about 1 inch from the bottom edge.

  4. 10

    Roll the Sushi

Using the bamboo mat, start rolling the sushi away from you, applying gentle pressure to keep it tight. Roll until the nori is sealed with a bit of water.

  5. 11

    Slice the Rolls

Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts to make slicing easier.

Serve

  1. 12

    Plate the Sushi

Arrange the sliced sushi rolls on a serving plate. Serve with soy sauce, wasabi, and pickled ginger on the side.
