Prepare the Broth

    Make the Base

    In a large pot, combine the chicken broth, soy sauce, miso paste, grated ginger, and minced garlic. Bring to a simmer over medium heat and let it cook for about 10 minutes to allow the flavors to meld.

Cook the Pork

    Prepare the Pork Belly

    In a skillet, heat the sesame oil over medium heat. Add the pork belly and cook, turning occasionally, until browned and crispy on all sides, about 10-15 minutes. Remove from heat and let it rest.

Cook the Noodles

    Boil the Noodles

    In a separate pot, bring water to a boil. Add the ramen noodles and cook according to package instructions, usually around 3-4 minutes. Drain and set aside.

Prepare the Toppings

    Soft-Boil the Eggs

    In a small pot, bring water to a boil. Carefully add the eggs and boil for 6-7 minutes for a soft yolk. Remove from water and place in an ice bath to cool. Once cool, peel and cut in half.

    Slice the Pork

    Once the pork belly has rested, slice it thinly.

Assemble the Ramen

    Combine All Elements

    In a large bowl, place a serving of cooked noodles. Ladle the hot broth over the noodles. Top with sliced pork, soft-boiled eggs, green onions, nori strips, bamboo shoots, and fresh spinach.
