Preparing Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh sieve and rinse it under cold running water until the water runs clear. This removes excess starch.

    Cook the Rice

    Combine the rinsed rice and water in a rice cooker or pot. Cook the rice according to the rice cooker's instructions or bring to a boil, then reduce heat, cover, and simmer for about 20 minutes.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Preparing Fillings

    Prepare Vegetables

    Julienne the cucumber, avocado, carrot, and bell peppers into thin strips. Ensure they are uniform in size for easy rolling.

    Prepare Crab Meat

    If using fresh crab meat, shred it into bite-sized pieces. If using imitation crab, pull apart into strips.

Rolling the Sushi

    Prepare the Rolling Mat

    Lay a bamboo sushi rolling mat on a flat surface and place a sheet of nori on top, shiny side down.

    Spread the Rice

    Wet your hands with water to prevent sticking. Take a handful of sushi rice (about 1 cup) and spread it evenly over the nori, leaving a 1-inch border at the top.

    Add Fillings

    Place strips of cucumber, avocado, carrot, crab meat, and bell peppers horizontally across the rice.

    Roll the Sushi

    Starting at the bottom edge, lift the mat and roll it away from you, tucking the fillings in as you go. Roll until you reach the top edge of the nori. Moisten the edge with a little water to seal the roll.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Clean the knife with a damp cloth between slices for a clean cut.

Serving

    Arrange the sushi pieces on a serving platter. Serve with soy sauce, wasabi, and pickled ginger on the side.
