Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This helps to remove excess starch.

    Cook the Rice

    In a medium pot, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Turn off the heat and let it sit covered for an additional 10 minutes.

    Season the Rice

    In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Make Spicy Tuna Mixture

    Prepare the Tuna

    Dice the fresh tuna into small cubes and place them in a mixing bowl.

    Mix Ingredients

    Add sriracha sauce, mayonnaise, sesame oil, chopped green onions, soy sauce, and salt to the bowl with tuna. Mix gently until combined.

Assemble Kamikaze Roll

    Prepare Nori

    Lay a sheet of nori on a bamboo sushi mat, shiny side down.

    Spread Sushi Rice

    Wet your hands with water to prevent sticking. Take about 1 cup of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

    Add Spicy Tuna

    Spoon a portion of the spicy tuna mixture along the bottom edge of the rice-covered nori.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep the roll tight. Seal the edge of the nori with a little water.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between each cut for cleaner slices.
