Dough Preparation

    Mix the Dough

    In a large bowl, combine the all-purpose flour and salt.

    Add Water

    Gradually add boiling water to the flour mixture, stirring with chopsticks or a fork until a rough dough forms.

    Knead the Dough

    Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Prepare the Filling

    In a mixing bowl, combine the ground pork, finely chopped cabbage, green onions, garlic, ginger, soy sauce, sesame oil, salt, and pepper. Mix until well combined.

Assembly and Cooking

    Roll the Dough

    After the dough has rested, divide it into small portions and roll each portion into a thin circle (about 3 inches in diameter).

    Fill the Dumplings

    Place a small spoonful of filling in the center of each dough circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.

    Pan-Fry the Gyoza

    Heat the vegetable oil in a skillet over medium heat. Arrange the gyoza in the skillet and cook for about 2-3 minutes until the bottoms are golden brown.

    Steam the Gyoza

    Carefully add water to the skillet (about 1 cup), cover immediately, and let steam for about 5-7 minutes until the water has evaporated.

    Serve

    Remove the lid and let the gyoza cook for an additional minute to crisp up the bottoms. Serve hot with soy sauce or dipping sauce of your choice.
