Prepare Sushi Rice

Place the sushi rice in a fine mesh strainer and rinse under cold running water until the water runs clear. This removes excess starch.

In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat, then cover and reduce the heat to low. Cook for about 18-20 minutes until the rice is tender and the water is absorbed.

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.

Slice the Avocado
Cut the avocado in half, remove the pit, and slice it into thin strips.

Cut the cucumber in half lengthwise and slice it into thin strips.

Soften the cream cheese slightly by letting it sit at room temperature for about 10 minutes, making it easier to spread.
Assemble the Rolls

Lay Out the Nori
Place a sheet of nori, shiny side down, on a bamboo sushi mat or a clean surface.

Wet your hands to prevent sticking, then take a handful of sushi rice and evenly spread it over the nori, leaving about 1 inch of space at the top.

Spread a layer of cream cheese along the center of the rice. Top with slices of smoked salmon, avocado, and cucumber.
