Preparation
Prepare the Bread
Preheat the oven to 400°F (200°C). Slice the baguette into 1/2 inch thick pieces. Arrange the slices on a baking sheet.
Toast the Bread
Brush each slice of baguette with olive oil on both sides. Place the baking sheet in the preheated oven and toast for about 5-7 minutes, or until golden brown and crispy. Remove from the oven and let cool slightly.
Topping Preparation
Prepare the Tomato Mixture
Dice the fresh tomatoes and place them in a mixing bowl. Mince the garlic and add it to the bowl. Tear the fresh basil leaves into small pieces and add them as well.
Add Cheese and Seasoning
Cube the mozzarella cheese into small pieces and add to the tomato mixture. Season with salt and black pepper to taste. Gently toss all the ingredients together until well combined.
Assembly
Assemble the Bruschetta
Spoon the tomato and mozzarella mixture generously onto each toasted baguette slice. Arrange the bruschetta on a serving platter.
Serve
Drizzle with a little more olive oil if desired and serve immediately. Enjoy your fresh bruschetta!
