Tempura Shrimp Preparation

    Prepare the Tempura Batter

    In a mixing bowl, combine the tempura batter mix with cold water until smooth. Let the batter sit for about 10 minutes.

    Fry the Shrimp

    Heat oil in a deep pan over medium-high heat. Dip each shrimp into the tempura batter and carefully place it into the hot oil. Fry for about 3-4 minutes or until golden brown. Remove and place on paper towels to drain excess oil.

Sushi Roll Assembly

    Prepare the Sushi Rice

    Ensure the sushi rice is cooked and slightly cooled. It should be sticky and easy to spread.

    Assemble the Roll

    Place a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands and spread half of the sushi rice evenly on the nori, leaving a small border at the top. Layer with sliced avocado, a tablespoon of cream cheese, wakame, and 3 pieces of tempura shrimp.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying light pressure. Roll until you reach the border of the nori, wet the edge with a little water to seal the roll.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for cleaner slices.

Serving

    Plate the Rolls

    Arrange the sushi rolls on a plate. Drizzle sweet tamari over the rolls and serve with a side of spicy mayo for dipping.
