Prepare Oysters

1. Wrap Oysters

Preheat your oven to 375°F (190°C). Carefully shuck the oysters and place them on a baking tray. Wrap each oyster with a slice of prosciutto.

Prepare Baked Shrimp Toast

2. Cook Shrimp

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add shrimp and cook until they turn pink, about 3-4 minutes.

3. Sauté Spinach

Add fresh spinach to the skillet and cook until wilted, about 2 minutes. Stir in diced tomatoes, salt, and black pepper. Cook for an additional 2-3 minutes until the mixture is heated through.

4. Prepare Toast

On a baking sheet, place baguette slices and spoon the shrimp and spinach mixture over each slice. Bake in the oven for about 10 minutes, until the bread is crispy.

Make Dill Hollandaise Sauce

In a heatproof bowl, whisk together egg yolks and lemon juice. Place the bowl over a pot of simmering water, ensuring the bowl does not touch the water. Whisk continuously until the mixture is thickened.

6. Add Butter

Slowly drizzle in melted butter, whisking constantly until the sauce is creamy. Stir in chopped dill and a pinch of salt. Remove from heat.

7. Roast Oysters

Place the baking tray with wrapped oysters in the oven. Bake for about 10-12 minutes until the prosciutto is crispy.
