For the Roast Atlantic Haddock

Preheat the Oven

Preheat your oven to 400°F (200°C).

Prepare the Haddock

Place the haddock fillets on a baking sheet lined with parchment paper. Drizzle with olive oil, and season with salt, black pepper, and lemon juice.

Roast the Haddock

Roast in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.

For the Lobster Mashed Potatoes

Boil the Potatoes

Peel and chop the potatoes into even-sized pieces. Place them in a large pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Add the Lobster

Fold in the cooked lobster meat gently into the mashed potatoes until evenly combined.

For the Nantucket Pan Sauce

Sauté the Vegetables

In a medium saucepan over medium heat, melt 2 tablespoons of butter. Add the diced red onion and red peppers, sautéing until softened, about 5 minutes.

Deglaze with Wine

Pour in the white wine and bring to a simmer. Cook until reduced by half, about 5-7 minutes.

Finish the Sauce

Remove from heat and stir in the remaining butter, chopped cornichons, and crumbled crispy bacon until well combined.
