    Prepare the Trout

    Rinse the trout fillets under cold water and pat dry with paper towels.

    Marinate the Trout

    In a bowl, combine olive oil, lemon juice, salt, and black pepper. Coat the trout fillets evenly with the marinade and let them sit for 30 minutes to absorb the flavors.

Smoking Process

    Prepare the Smoker

    Soak the hickory wood chips in water for at least 30 minutes. This will help produce a better smoke.

    Preheat the Smoker

    Preheat your smoker to 225°F (107°C). If using a charcoal smoker, ensure to set it up for indirect heat.

    Smoke the Trout

    Once the smoker is ready, place the trout fillets on the grill grates skin-side down. Add the soaked hickory wood chips to the smoker box or directly onto the coals. Close the lid and smoke the trout for 1 to 1.5 hours, or until the internal temperature reaches 145°F (63°C).

Serving the Trout
