Prepare the Wakame
Soak the dried wakame in warm water for about 10 minutes until it expands. Drain and chop into small pieces.

Mix the Cream Cheese Filling
In a bowl, combine the cream cheese, chopped scallions, umami mayo, and chopped wakame. Mix until smooth and well combined.

Prepare the Rice
Rinse the sushi rice under cold water until the water runs clear. Cook according to package instructions. Once cooked, mix in the rice vinegar and let it cool slightly.
Assembling the Roll

Lay Out the Nori
Place a nori sheet, shiny side down, on a bamboo sushi mat or clean surface.

Spread the Rice
Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving about an inch at the top edge.

Add the Filling
Spread a layer of the cream cheese mixture over the rice. Then, place slices of avocado and pastrami smoked salmon on top.

Roll the Sushi
Starting from the edge closest to you, carefully roll the sushi away from you, using the mat to keep it tight. Press gently to seal the edge of the nori with a little water.

Slice the Roll
Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts to ensure clean slices.
Serving

Serve with Sweet Tamari
Arrange the sushi pieces on a plate and drizzle with sweet tamari. Serve immediately and enjoy!
