Method

For the Sesame Seared Tuna

1

Prepare the Tuna

Season the tuna steaks with salt and black pepper on both sides.

2

Coat with Sesame Seeds

Press sesame seeds onto both sides of the seasoned tuna steaks until well coated.

3

Sear the Tuna

Heat olive oil in a skillet over medium-high heat. Once hot, add the tuna steaks and sear for about 1-2 minutes on each side for rare, or longer if desired.

4

Slice and Serve

Remove from heat, let rest for a minute, then slice and serve immediately.

For the Seared Broccoli

5

Prepare the Broccoli

In a separate pot, bring water to a boil and blanch broccoli florets for 2-3 minutes until bright green.

6

Sauté Broccoli

Drain and transfer to a skillet. Heat olive oil over medium heat, add minced garlic, salt, and pepper, and sauté the broccoli for an additional 3-4 minutes until tender.

For the Wasabi Mashed Potatoes

7

Cook the Potatoes

In a large pot, boil the cubed potatoes in salted water until fork-tender, about 15-20 minutes.

8

Mash and Flavor

Drain the potatoes, then return to the pot. Add butter, milk, wasabi paste, and salt. Mash until smooth and creamy.

For the Ginger Demi Glace

9

Prepare the Sauce

In a saucepan, combine chicken or beef stock, grated ginger, and soy sauce. Bring to a boil.

10

Thicken the Sauce

In a small bowl, mix cornstarch with water to create a slurry. Stir into the boiling sauce and cook until thickened, about 2-3 minutes.
