Preparation of Ingredients

    Prepare the Pancetta

    Chop the pancetta into small pieces. Set aside.

    Prepare the Roasted Red Peppers

    If using whole roasted red peppers, chop them into small pieces.

    Prepare the Olives

    Chop the kalamata olives into small pieces.

    Prepare the Scallops

    Rinse the sea scallops under cold water and pat them dry with paper towels.

Cooking

    Cook the Pancetta

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped pancetta and cook until crispy, about 5-7 minutes. Remove from skillet and set aside.

    Sauté the Scallops

    In the same skillet, add another tablespoon of olive oil. Increase the heat to medium-high. Season the scallops with salt and pepper. Sauté the scallops for about 2-3 minutes on each side until golden brown and cooked through. Remove and set aside.

    Combine Ingredients

    In the skillet, lower the heat to medium, add the roasted red peppers, kalamata olives, and heavy cream. Stir to combine and let simmer for 2-3 minutes until heated through.

    Finish the Dish

    Add the crispy pancetta and scallops back into the skillet. Stir gently to coat with the cream sauce and heat for an additional minute.

    Prepare the Ciabatta

    While the scallops are cooking, grill or toast the ciabatta slices until golden brown.
