    Prepare the seafood

    Rinse the mussels and clams under cold water. Discard any that are open and do not close when tapped. Set aside.

    Dice the vegetables

    Peel and dice the potatoes into small cubes. Chop the onion and red bell pepper. Mince the garlic.

    Slice the chourico

    Slice the chourico sausage into thin rounds.

    Prep the ciabatta

    Slice the ciabatta loaf and set aside for grilling.

Cooking the stew

    Cook the chourico

    In a large pot, heat olive oil over medium heat. Add the chourico and cook for about 5 minutes until browned.

    Sauté the aromatics

    Add the chopped onion, minced garlic, and red bell pepper to the pot. Sauté for about 3-4 minutes until the onion is translucent.

    Add the broth ingredients

    Stir in the diced tomatoes, fish stock, and white wine. Add the bay leaves, salt, black pepper, and cayenne pepper. Bring to a simmer.

    Incorporate the potatoes

    Add the diced potatoes to the pot. Cover and let simmer for about 10 minutes or until the potatoes are tender.

    Add the seafood

    Gently add the haddock, mussels, clams, scallops, and shrimp to the pot. Cover and cook for an additional 5-7 minutes until the seafood is cooked through and mussels and clams have opened.

    Finish with herbs

    Remove from heat and stir in the chopped parsley. Adjust seasoning if necessary.

    Grill the ciabatta

    While the stew is cooking, grill the ciabatta slices until toasted.
