Method

Prepare the Oysters

    Shuck the Oysters

    Carefully shuck the fresh oysters, ensuring to keep them on the half shell. Place them on a platter with crushed ice to keep them chilled.

Make the Crab Mixture

    Combine Ingredients

    In a mixing bowl, combine the lump crab meat, mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, and salt. Gently fold the ingredients together until well mixed.

Prepare Hot Honey

    Combine Honey and Spice

    In a small saucepan over low heat, combine the honey and red pepper flakes. Stir until the mixture is warm and well combined, then remove from heat.

Prepare the Wonton Chips

    Fry the Wonton Wrappers

    In a deep pan, heat the oil over medium heat. Once hot, carefully add the wonton wrappers in batches, frying until they are golden and crispy, about 1-2 minutes. Remove and drain on paper towels.
