Oven Roasted Salmon

Prepare the Salmon
Preheat your oven to 400°F (200°C). Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil, and season with salt and black pepper.

Roasted Cauliflower

Prepare the Cauliflower
While the salmon is baking, prepare the cauliflower. Toss the cauliflower florets in a bowl with olive oil, salt, garlic powder, and paprika until well coated.

Roast the Cauliflower
Spread the cauliflower evenly on another baking sheet. Roast in the oven alongside the salmon for about 20-25 minutes, or until golden brown and tender, stirring halfway through.
English Peas

Cook the Peas
In a small saucepan, melt the butter over medium heat. Add the frozen English peas, season with salt and pepper, and cook for about 5-7 minutes, stirring occasionally, until heated through.
Dill Hollandaise

Make the Hollandaise
In a heatproof bowl, whisk together the egg yolks and lemon juice until light and frothy. Set the bowl over a pot of simmering water, ensuring the bowl doesn’t touch the water.

Add Butter and Season
Slowly drizzle in the melted butter while continuously whisking until the sauce thickens and becomes creamy. Stir in chopped dill and season with salt to taste.
