Preparation

    Cook the Lobster

    Bring a large pot of salted water to a boil. Add the whole lobsters and cook for about 8-10 minutes until they turn bright red. Remove the lobsters and let them cool. Save some of the cooking water for the pasta.

    Cook the Spaghetti

    In the same pot, add the spaghetti to the reserved lobster cooking water and cook according to package instructions until al dente. Drain, reserving about 1 cup of pasta water.

    Prepare the Zucchini

    While the pasta is cooking, slice the zucchini into thin rounds or half-moons.

    Make the Garlic Chips

    Slice the garlic cloves thinly. In a small pan, heat a splash of olive oil over medium heat. Add the garlic and cook until golden and crispy, about 2-3 minutes. Remove and drain on paper towels.

    Extract the Lobster Meat

    Once the lobsters are cool, crack the shells and remove the meat. Chop the meat into bite-sized pieces.

    Prepare the Lobster Butter Sauce

    In a large skillet, heat the olive oil over medium heat. Add the cooked lobster meat and sauté for 2-3 minutes. Pour in the white wine and let it simmer for 3-4 minutes until reduced slightly. Add the butter and stir until melted, creating a sauce.

    Combine Ingredients

    Add the cooked spaghetti to the skillet with the lobster butter sauce. Toss to combine, adding reserved pasta water as needed to reach desired consistency. Stir in the zucchini and tomato relish. Season with salt and black pepper to taste.

    Serve

    Plate the lobster spaghetti and top with crispy garlic chips. Garnish with additional herbs if desired.
