Lobster Omelette

Prepare the Asparagus
In a small pot of boiling salted water, blanch the asparagus pieces for 2-3 minutes until bright green and tender. Drain and set aside.

Whisk the Eggs
In a mixing bowl, whisk together the eggs, salt, and black pepper until well combined.

Cook the Omelette
In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Pour in the egg mixture and let it cook for 1-2 minutes until the edges begin to set.

Add Filling
Add the blanched asparagus, lobster meat, and dollops of cream cheese to one side of the omelette. Cook for an additional 1-2 minutes until the cheese starts to melt.

Fold and Serve
Gently fold the omelette in half and slide it onto a plate. Keep warm while you prepare the home fries and gravy.

Cook the Potatoes
In a large skillet, heat olive oil over medium heat. Add the diced potatoes and cook for about 10 minutes, stirring occasionally, until they start to brown.

Finish and Keep Warm
Once cooked, remove from heat and cover to keep warm until ready to serve.

Add Stock and Cream
Gradually whisk in the lobster stock and heavy cream. Bring to a simmer, stirring constantly until the gravy thickens, about 5 minutes.

Season the Gravy
Season with salt and black pepper to taste. Remove from heat and set aside until ready to serve.
