Preparation of Housemade Salsa

    Chop Vegetables

    Dice the tomatoes, onion, jalapeño, and fresh cilantro. Place them in a mixing bowl.

    Combine Ingredients

    Add lime juice and salt to the chopped vegetables in the bowl. Mix well to combine.

    Set Aside

    Let the salsa sit for at least 15 minutes to allow the flavors to meld.

Cooking the Chorizo

    Cook Chorizo

    In a skillet over medium heat, add the chorizo. Cook for about 5-7 minutes, breaking it apart with a spatula, until fully cooked and browned.

Cooking Eggs and Assembling

    Cook Eggs

    In the same skillet, reduce heat to low and crack the eggs into the pan. Cook sunny-side up until the whites are set but the yolks are still runny, about 3-4 minutes.

    Warm Tortillas

    In a separate pan, warm the corn tortillas over medium heat for about 1 minute on each side until pliable.

    On each warm tortilla, layer the cooked rice, red beans, and chorizo. Top with the sunny-side up egg, housemade salsa, diced avocado, crumbled queso fresco, and chopped cilantro.
