Preparing the Grilled Salmon

    Marinate the Salmon

    In a large bowl, combine olive oil, lemon juice, garlic powder, salt, and black pepper. Add the salmon fillets and coat them evenly with the marinade. Let it marinate for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat (around 400°F or 200°C).

    Grill the Salmon

    Place the marinated salmon fillets on the grill. Cook for about 5-6 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. If using, sprinkle fresh dill on top before serving.

    Wash and chop the zucchini, bell peppers, and carrots into bite-sized pieces.

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped vegetables, salt, and black pepper. Sauté for about 5-7 minutes or until the vegetables are tender but still crisp.

    Rinse the long-grain rice under cold water until the water runs clear to remove excess starch.

    In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the water is absorbed.
