Salad Preparation

Prepare the Greens
Wash the local greens thoroughly under cold running water. Shake off excess water and pat dry with a clean kitchen towel. Place the greens in a large salad bowl.

Fry the Bacon
In a large skillet, cook the bacon slices over medium heat until crispy, about 5-7 minutes. Turn the bacon occasionally to ensure even cooking. Once done, transfer the bacon to a plate lined with paper towels to drain excess fat.

Fry the Tomatoes
In the same skillet with the bacon grease, add sliced tomatoes (about 1/2 inch thick). Fry for about 2-3 minutes on each side until they are slightly golden and warm. Remove from heat and set aside.

Add Ingredients to Salad
Crumble the crispy bacon and add it to the bowl with the local greens. Add the fried tomatoes and the grated parmesan cheese on top.

Make the Dressing
In a medium bowl, combine mayonnaise, sour cream, 1/4 cup of parmesan cheese, cracked black pepper, garlic powder, lemon juice, and salt. Whisk together until smooth and well combined.
