Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Soak in Buttermilk
Soak the calamari rings in buttermilk for about 30 minutes to tenderize.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Remove the calamari from the buttermilk and coat them in the flour mixture, shaking off any excess flour.

Fry the Calamari
Fry the coated calamari rings in batches for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Make the Sauce
Add the canned crushed tomatoes, dried oregano, dried basil, red pepper flakes, salt, black pepper, and sugar to the saucepan. Stir to combine.

Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.
