Method
Fish Preparation
- 1
Prepare the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and well combined.
- 2
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the correct temperature for frying.
- 3
Fry the Haddock
Dip each haddock fillet into the batter, allowing excess to drip off. Carefully place the battered fillets in the hot oil, cooking for 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Bay Sauce Preparation
- 4
Mix the Bay Sauce
In a small bowl, combine the mayonnaise, Dijon mustard, lemon juice, capers, and chopped parsley. Mix well until fully combined and smooth. Adjust seasoning with salt and pepper to taste.
Sandwich Assembly
- 5
Assemble the Sandwich
Slice the brioche buns in half. Spread a generous amount of bay sauce on the bottom half of each bun. Add a piece of fried haddock on top, followed by a few dill pickles. Top with the other half of the bun and serve immediately.
