    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and well combined.

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the correct temperature for frying.

    Fry the Haddock

    Dip each haddock fillet into the batter, allowing excess to drip off. Carefully place the battered fillets in the hot oil, cooking for 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    In a small bowl, combine the mayonnaise, Dijon mustard, lemon juice, capers, and chopped parsley. Mix well until fully combined and smooth. Adjust seasoning with salt and pepper to taste.
