Prepare Sushi Rice

    Rinse Rice

    Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook Rice

    In a rice cooker or pot, combine the rinsed sushi rice and 1.25 cups of water. Cook according to the rice cooker's instructions or bring to a boil, then reduce to low heat, cover, and simmer for 20 minutes.

    Season Rice

    Once the rice is cooked, let it sit covered for 10 minutes. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice using a wooden spatula. Allow it to cool to room temperature.

Prepare Filling

    Mix Filling

    In a bowl, combine the imitation crab meat, mayonnaise, and Sriracha sauce. Chop the green onions and fold them into the mixture. Set aside.

Assemble Dynamite Roll

    Lay Nori

    Place a nori sheet on a bamboo sushi mat, shiny side down.

    Spread Rice

    Wet your hands to prevent sticking, then take a handful of the sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

    Add Filling

    Spoon the crab filling evenly over the rice, about 1 inch from the bottom edge.

    Roll Sushi

    Using the bamboo mat, carefully roll the sushi away from you, pressing gently to keep the roll tight. Once rolled, use a sharp knife to slice the roll into 6-8 pieces.

    Garnish

    Sprinkle orange tobiko on top of the sliced rolls and drizzle with sweet tamari sauce before serving.
