Method

Preparation

  1. 1

    Prepare the Garlic Chips

Thinly slice the garlic cloves. Heat the olive oil in a small pan over medium heat and add the sliced garlic. Fry until golden brown and crispy, about 3-5 minutes. Remove with a slotted spoon and place on paper towels to drain excess oil. Set aside.

  2. 2

    Prepare the Tuna and Salmon

Slice the tuna loin into small cubes or sashimi-style slices, depending on your preference. Cut the salmon sashimi into similar-sized pieces to match the tuna.

  3. 3

    Prepare the Avocado

Cut the avocado in half, remove the pit, and scoop out the flesh. Slice the avocado into thin, even slices.

Assembly

  1. 4

    Assemble the Plate

On a serving plate, arrange the sliced avocado in a fan shape. Place the tuna and salmon pieces on top of or around the avocado.

  2. 5

    Add the Sauces

Drizzle the umami mayo and spicy mayo over the fish and avocado. Use a spoon or squeeze bottle for a clean presentation.

  3. 6

    Finish with Toppings

Sprinkle the garlic chips on top for crunch, add dollops of yuzu tobiko around the plate, and garnish with micro cilantro for freshness.
