Prep the Shrimp
Rinse the large shrimp under cold water and pat them dry with paper towels. Ensure that they are fully peeled and deveined.

Make the Batter
In a medium-sized mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water until the batter is smooth and free of lumps. It should have a pourable consistency.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; it should sizzle and rise to the surface.

Fry the Shrimp
Dip each shrimp into the batter, allowing any excess to drip off. Carefully place the battered shrimp into the hot oil, avoiding overcrowding the pan. Fry in batches for about 3-4 minutes or until golden brown and crispy.

Drain and Serve
Once cooked, use a slotted spoon to remove the shrimp from the oil and place them on a plate lined with paper towels to drain excess oil. Sprinkle with chopped cilantro for garnish before serving.
