Prepare Sushi Rice

    Rinse and Cook Rice

    Rinse the sushi rice under cold water until the water runs clear. In a rice cooker, combine the rinsed rice and water. Cook according to the rice cooker instructions.

    In a small saucepan, combine rice vinegar, sugar, and salt over low heat until sugar dissolves. Once the rice is cooked, transfer it to a large bowl and gently mix in the vinegar mixture. Let it cool to room temperature.

Make Spicy Tuna Mixture

    Prepare Tuna

    Dice the sushi-grade tuna into small cubes. In a bowl, combine the diced tuna, mayonnaise, Sriracha, sesame oil, and chopped green onions. Mix well until evenly combined.

Prepare Toppings

    Cook Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Drain on paper towels and chop into small pieces.

    Slice Avocado

    Cut the avocado in half, remove the pit, and slice it into thin wedges.

Assemble Dish

    Create Sushi Roll

    On a bamboo sushi mat, spread a layer of sushi rice evenly. Place a line of the spicy tuna mixture in the center, followed by crispy bacon, pickled onion, and avocado slices.

    Using the bamboo mat, carefully roll the sushi away from you, tucking it in tightly. Once rolled, slice into bite-sized pieces. Drizzle with sweet tamari and top with sesame seeds and umami mayo.
