Clean the Mussels
Rinse the mussels under cold running water and scrub the shells to remove any dirt or debris. Remove the beards by pulling them off firmly.

Prepare the Chourico
Remove the casing from the chourico sausage and crumble it into small pieces.

Sauté Chourico
In a large pot or Dutch oven, heat the olive oil and 1 tablespoon of butter over medium heat. Add the crumbled chourico and sauté for about 5 minutes, or until browned.

Incorporate Tomatoes and Herbs
Stir in the diced tomatoes, parsley, thyme, salt, and pepper. Cook for an additional 5 minutes, allowing the tomatoes to break down slightly.

Finish with Butter
Once the mussels are open, stir in the remaining tablespoon of butter until melted and well combined.
