Mousse Preparation

Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water (double boiler method) until smooth. Remove from heat and let cool slightly.

Whisk Eggs and Sugar
In a separate bowl, whisk the eggs and granulated sugar together until the mixture is pale and fluffy, about 5-7 minutes.

Combine Mixtures
Gently fold the melted chocolate into the egg mixture until fully incorporated. Add the vanilla extract and a pinch of salt, mixing until combined.

Chill the Mousse
Transfer the mousse mixture into serving glasses or bowls. Refrigerate for at least 2 hours or until set.

Beat the Cream
In a mixing bowl, pour the heavy cream, powdered sugar, and vanilla extract. Using a hand mixer or whisk, beat the cream until soft peaks form.

Top the Mousse
Once the mousse has set, remove it from the refrigerator and top each serving with a generous dollop of whipped cream.
