For the Chicken

Marinate the Chicken
In a large bowl, combine buttermilk, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Add the chicken thighs and ensure they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare for Frying
In a large bowl, mix all-purpose flour with a pinch of salt. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).

Fry the Chicken
Remove chicken from the marinade and shake off excess buttermilk. Dredge each piece in the flour mixture, pressing lightly to adhere. Fry the chicken in batches for about 6-8 minutes per side, or until golden brown and cooked through. Drain on paper towels.

Prepare the Batter
In a large bowl, whisk together flour, baking powder, sugar, and salt. In another bowl, beat the eggs and mix in milk, melted butter, and vanilla extract. Combine the wet ingredients with the dry ingredients and stir until just combined.

Preheat the waffle maker according to manufacturer instructions. Pour the batter into the waffle maker and cook until golden brown and crispy, about 5 minutes. Repeat with the remaining batter.

Whip the Mascarpone
In a mixing bowl, combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Use an electric mixer to whip until soft peaks form. Set aside.
For the Bourbon Maple Syrup

Combine Syrup and Bourbon
In a small saucepan over low heat, mix together maple syrup and bourbon. Stir until heated through and combined, then remove from heat.
