Crust Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Mix the Crust Ingredients

    In a medium mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated.

    Form the Crust

    Press the mixture into the bottom of a 9-inch springform pan evenly. Use the back of a measuring cup to pack it tightly.

    Bake the Crust

    Bake the crust in the preheated oven for 8-10 minutes, or until lightly golden. Remove from the oven and let it cool.

Filling Preparation

    Prepare the Filling

    In a large mixing bowl, use an electric mixer to beat the softened cream cheese until smooth.

    Add Sugar and Sour Cream

    Gradually add the sugar and sour cream to the cream cheese, mixing until well combined.

    Incorporate Vanilla and Eggs

    Add the vanilla extract and then add eggs one at a time, mixing on low speed until just combined after each addition.

    Pour into Crust

    Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.

    Bake the Cheesecake

    Bake in the oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake in the oven with the door slightly ajar for about 1 hour.

    Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight.

Topping Preparation

    In a medium bowl, combine the sliced strawberries, sugar, and lemon juice. Toss well to combine.

    Allow the strawberries to marinate for at least 15 minutes. This will help enhance their flavor.

    Once the cheesecake is chilled and set, remove it from the springform pan and top with the marinated strawberries before serving.
