Prepare Sushi Rice

Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
Combine the rinsed sushi rice and water in a rice cooker or pot. Cook according to rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.

Season the Rice
In a small saucepan, combine rice vinegar, sugar, salt, and sesame oil. Heat gently until the sugar dissolves. Once the rice is cooked, pour the mixture over the rice and fold gently to combine. Allow to cool to room temperature.

Prepare the Seafood
If not pre-prepared, slice the sushi-grade tuna and salmon into thin strips.
Assemble the Rolls

Lay Out the Ingredients
Place a bamboo sushi mat on a clean surface, and lay a sheet of nori (seaweed) on the mat, shiny side down.

Spread the Rice
Wet your hands to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

Roll the Sushi
Using the bamboo mat, start rolling the sushi tightly from the bottom, tucking in the fillings as you go. Roll until you reach the bare edge of the nori. Wet the edge with a little water to seal the roll.

Slice the Roll
Using a sharp knife, slice the roll into 6-8 pieces, wiping the knife with a wet cloth between cuts for clean edges.

Plate the Rolls
Arrange the sushi rolls on a platter. Drizzle with wasabi mayo and spicy mayo, and top with yuzu tobiko.

Serve with additional wasabi and soy sauce on the side for dipping.
