Calamari

Method

Calamari

  1. 1

    Prepare the Calamari

Clean the calamari by removing the head, innards, and skin. Rinse under cold water and slice into rings about 1/2 inch thick.

  2. 2

    Prepare the Breading

In a large bowl, mix together the flour, cornstarch, salt, black pepper, paprika, and garlic powder.

  3. 3

    Prepare the Egg Mixture

In another bowl, whisk together the eggs and milk until well combined.

  4. 4

    Bread the Calamari

Dip each calamari ring first into the egg mixture, then into the flour mixture, ensuring they are well coated. Place on a wire rack to rest.

  5. 5

    Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  6. 6

    Fry the Calamari

Carefully add the breaded calamari rings to the hot oil in batches, frying for 2-3 minutes or until golden brown. Use a slotted spoon to transfer to a paper towel-lined plate to drain.

Spicy Marinara Sauce

  1. 7

    Sauté Garlic

In a medium saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.

  2. 8

    Add Tomatoes and Seasonings

Stir in crushed tomatoes, red pepper flakes, dried oregano, salt, and black pepper. Bring to a simmer.

  3. 9

    Simmer the Sauce

Reduce heat and let the sauce simmer for 15-20 minutes, stirring occasionally until it thickens.

  4. 10

    Finish the Sauce

Stir in chopped fresh basil before serving.
