Prepare the Strawberries
Wash the fresh strawberries thoroughly under running water. Pat them dry with a paper towel and remove the green tops. Slice the strawberries into halves or quarters, depending on their size.

Prepare the Mint
Take fresh mint leaves and gently tear them using your fingers to release their aromatic oils. You can also chop them finely if preferred.

Make the Simple Syrup
In a small saucepan, combine equal parts of water and granulated sugar. Heat over medium until the sugar dissolves completely. Allow to cool before use.
Mixing the Drink

Combine Ingredients
In a large pitcher or mixing bowl, add the prepared strawberries and torn mint leaves. Pour in the simple syrup and gently stir to combine.

Add the Bubbles
Slowly pour the Domaine Chandon Brut over the strawberry and mint mixture. Be careful to pour gently to preserve the bubbles in the champagne.
Serving

Garnish and Serve
Pour the Brunch Bubbles into champagne flutes. Optionally, add a sprinkle of lemon zest and a few edible flowers for decoration. Serve immediately and enjoy!
