Prepare Sushi Rice

    Rinse the Rice

    In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    Add the rinsed sushi rice and 2.5 cups of water to a rice cooker. Cook according to the rice cooker instructions. If using a pot, bring to a boil, then cover and reduce to low heat for 18-20 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture while the rice is still warm.

    Slice the Ingredients

    Thinly slice the fresh salmon and tuna into strips. Cut the avocado in half, remove the pit, and slice it. Julienne the cucumber into thin strips.

Assemble Sushi

    Prepare the Nori

    Lay a sheet of nori on a bamboo sushi mat, shiny side down.

    Spread the Rice

    Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top.

    Add Fillings

    Lay the sliced salmon, tuna, avocado, and cucumber in a line across the middle of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, pressing gently to form a tight roll. Wet the edge of the nori to seal the roll.

    Slice the Rolls

    Use a sharp knife to slice the sushi roll into 6-8 pieces, wiping the knife with a damp cloth between cuts to prevent sticking.

Serve

    Plate the Sushi

    Arrange the sushi pieces on a plate. Serve with soy sauce, wasabi, and pickled ginger on the side.
