Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the broth is absorbed. Remove from heat and let it sit covered for another 5 minutes.

Press the tofu to remove excess moisture. Cut into cubes. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the tofu cubes and cook until golden brown on all sides, about 10 minutes. Season with a pinch of salt and black pepper.

Drain and rinse the canned chickpeas. In the same skillet used for tofu, add another tablespoon of olive oil, and add the chickpeas. Cook for about 5-7 minutes until heated through and slightly crispy. Season with garlic powder, salt, and pepper.

Chop the bell pepper, zucchini, and carrot into bite-sized pieces. In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Add the chopped vegetables, and sauté for about 5-7 minutes until they are tender. Add the spinach last and cook until wilted, about 2 minutes.
