Marinate Chicken

    Prepare the Marinade

    In a bowl, combine olive oil, minced garlic, oregano, paprika, salt, black pepper, and lemon juice. Mix well to form a marinade.

    Place the chicken breasts in a zip-lock bag or a shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes or up to 4 hours.

Cook Quinoa

    Rinse Quinoa

    Rinse the quinoa under cold water in a fine mesh strainer to remove the bitter coating.

    Cook Quinoa

    In a saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let sit covered for an additional 5 minutes.

Prepare Vegetables

    Chop Vegetables

    Chop broccoli, carrots, and red bell pepper into bite-sized pieces.

    Steam Vegetables

    In a steamer basket over boiling water, steam the chopped vegetables for about 5-7 minutes until tender but still crisp.

Cook Chicken

    Grill Chicken

    Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).

Assemble Dish

    Plate the Meal

    On a plate, place a serving of quinoa, top with grilled chicken, and arrange the steamed vegetables on the side. Drizzle with any remaining marinade if desired.
