Preparing Sushi Rice

    Rinse the Rice

    In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a rice cooker or pot, combine the rinsed sushi rice and 2.5 cups of water. Cook according to the rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes.

    Season the Rice

    Once the rice is cooked, transfer it to a large bowl. In a small bowl, combine rice vinegar, sugar, and salt. Microwave for 30 seconds or until sugar dissolves. Pour over the rice and fold gently to combine. Let cool to room temperature.

    Prepare the Fillings

    Thinly slice the fresh salmon, cucumber, and avocado. Set aside for assembly.

Assembling Sushi

    Lay Out the Nori

    Place a sheet of nori on a bamboo sushi mat, shiny side down.

    With wet hands, spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge.

    Line your desired fillings (salmon, cucumber, avocado) horizontally across the rice.

    Roll the Sushi

    Using the bamboo mat, roll the sushi tightly away from you, applying gentle pressure. Wet the top edge of the nori to seal the roll.

    Slice the Roll

    With a sharp, wet knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts.

    Serve soy sauce in small bowls alongside wasabi and pickled ginger for dipping.
