    In a medium bowl, combine the finely chopped lemongrass, minced garlic, soy sauce, fish sauce, brown sugar, black pepper, lime juice, and vegetable oil. Whisk together until the sugar is dissolved and the mixture is well combined.

Marinating the Beef

    Slice the ribeye steak into thin strips, about 1/4 inch thick. This will help the beef absorb the marinade and cook quickly on the grill.

    Marinate the Beef

    Place the sliced ribeye into a zip-top bag or a shallow dish. Pour the marinade over the beef, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

Grilling

    Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are evenly heated and covered in ash.
