In a medium bowl, combine the finely chopped lemongrass, minced garlic, soy sauce, fish sauce, brown sugar, black pepper, lime juice, and vegetable oil. Whisk together until the sugar is dissolved and the mixture is well combined.

Marinate the Beef
Place the sliced ribeye into a zip-top bag or a shallow dish. Pour the marinade over the beef, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

Rest and Serve
Once grilled, remove the beef from the grill and let it rest for about 5 minutes before serving. This allows the juices to redistribute. Serve hot and enjoy!
