Cook the Rice
Rinse the rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 4 cups of water, bring to a boil, then reduce heat to low, cover and simmer for 18-20 minutes until the rice is tender and water is absorbed.

Prepare the Chicken
Cut the chicken breast into bite-sized pieces. Mince the garlic and ginger and chop the bell peppers and green onions.

Stir-Fry the Chicken
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.

Sauté the Vegetables
In the same skillet, add another tablespoon of sesame oil. Add minced garlic, ginger, and bell peppers. Stir-fry for about 2-3 minutes, then add broccoli florets and continue to cook for another 2 minutes until vegetables are tender-crisp.

Combine Ingredients
Return the cooked chicken to the skillet. Pour in the soy sauce and sprinkle with black pepper and red pepper flakes. Stir well to combine and heat through for an additional 2 minutes.
Serving

Plate the Dish
Serve the stir-fry over a bed of rice. Garnish with chopped green onions and sesame seeds before serving.
