Cook the Rice
Rinse 2 cups of jasmine rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice with 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and let sit for 5 minutes before fluffing with a fork.

Prepare the Tofu
While the rice is cooking, drain the firm tofu and press it for about 15 minutes to remove excess moisture. Cut the tofu into bite-sized cubes and toss it with 2 tablespoons of cornstarch, salt, and pepper.

Sauté Vegetables
In a large skillet or wok, heat 2 tablespoons of sesame oil over medium-high heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant. Then, add the broccoli florets, sliced carrots, and bell pepper. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp. Remove the vegetables from the skillet and set aside.

Add Sauce
Pour 1 cup of soy sauce and 1 cup of vegetable broth into the skillet. Stir well to combine all ingredients and bring to a simmer. Let it cook for an additional 5 minutes to allow flavors to meld.

Serve the stir-fry over the cooked jasmine rice. Garnish with chopped green onions and a sprinkle of sesame seeds if desired.
