Prepare the Onions
Peel the onions and slice them into 1/2-inch thick rings. Separate the rings and set aside.

Make the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika. Gradually whisk in the cold sparkling water until the batter is smooth and well combined.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Onion Rings
Dip each onion ring into the batter, allowing the excess to drip off.

Fry the Rings
Carefully place the coated onion rings into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown, about 2-3 minutes per side.

Drain and Serve
Remove the onion rings from the oil and place them on paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
