Preparation
Marinate the Chicken
In a large bowl, add the chicken breasts and cover with buttermilk. Let it marinate in the refrigerator for at least 2 hours, or overnight for best results.
Prepare the Breading
In a separate bowl, mix together flour, cornstarch, salt, black pepper, paprika, garlic powder, and onion powder.
Heat the Oil
In a large skillet or deep fryer, heat vegetable oil to 350°F (175°C).
Batter the Chicken
Remove chicken from buttermilk and let excess liquid drip off. Dredge each piece in the flour mixture, pressing to adhere.
Fry the Chicken
Carefully place the battered chicken in the hot oil. Fry for 7-10 minutes on each side, or until golden brown and cooked through. Transfer to a wire rack to drain.
Make the Gravy
In a skillet over medium heat, cook the breakfast sausage until browned. Stir in flour and cook for 1-2 minutes. Gradually add milk while stirring, and bring to a simmer. Season with salt, black pepper, and red pepper flakes.
Serve
Serve the fried chicken hot with a generous ladle of sausage gravy over the top.
