    Prepare the Dough

    In a small bowl, combine warm milk (about 110°F) and active dry yeast. Let it sit for about 5-10 minutes until frothy. In a large mixing bowl, whisk together flour, sugar, and salt. Make a well in the center and add the yeast mixture, eggs, and melted butter. Mix until a soft dough forms.

    Knead the Dough

    Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place until doubled in size, about 1-2 hours.

    Shape the Beignets

    Once the dough has risen, punch it down and roll it out to about 1/4 inch thick. Cut into squares or rectangles, about 2-3 inches in size. Let the cut beignets rise for another 30 minutes.

    Fry the Beignets

    In a deep pot, heat the vegetable oil to 350°F (175°C). Fry the beignets in batches, about 2-3 minutes on each side, until they are golden brown. Remove with a slotted spoon and drain on paper towels.
