Add taco seasoning and diced tomatoes to the skillet. Stir to combine and cook for an additional 5 minutes, allowing the flavors to meld.

Warm the flour tortillas in a separate skillet or microwave until pliable.

Spoon the beef mixture into each tortilla. Top with lettuce, Monterey Jack cheese, and Colby cheese.
