Cook the Beef
In a large skillet, heat olive oil over medium heat. Add ground beef, salt, black pepper, chili powder, and cumin. Cook until the beef is browned and fully cooked, about 7-10 minutes. Drain excess fat if necessary.

Prepare the Tortillas
In a separate pan, warm the corn tortillas over low heat until soft and pliable, about 1-2 minutes per side.

Assemble the Enchiladas
Take a warm tortilla and spoon about 2-3 tablespoons of the cooked beef mixture in the center. Roll the tortilla around the filling and place seam side down in a greased baking dish. Repeat with remaining tortillas and beef.

Add Sauce and Cheese
Pour enchilada sauce over the rolled tortillas, ensuring they are well covered. Sprinkle shredded Colby cheese evenly on top.

Bake
Preheat the oven to 375°F (190°C). Bake the enchiladas in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Prepare the Toppings
While the enchiladas bake, rinse and prepare the lettuce, diced tomatoes, and sliced black olives.

Serve
Remove enchiladas from the oven. Serve hot, topped with shredded lettuce, diced tomatoes, and sliced black olives. Serve with black beans and a dollop of sour cream on the side.
