Preparation

Grilling the Chicken

1. Prepare the Chicken

In a bowl, combine olive oil, lime juice, garlic powder, cumin, salt, and black pepper. Add the chicken breasts and marinate for at least 30 minutes.

2. Grill the Chicken

Preheat the grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked. Remove from grill and let rest for a few minutes before slicing.

Preparing Black Beans

3. Heat the Beans

In a saucepan over medium heat, combine the drained black beans, cumin, salt, and black pepper. Heat through, stirring occasionally, for about 5-7 minutes.

Making Avocado Poblano Salsa

4. Combine Ingredients

In a bowl, mash one avocado. Add roasted and diced poblano pepper, diced red onion, chopped cilantro, and lime juice. Mix well and set aside.

Assembling Tacos

5. Assemble the Tacos

Warm the corn tortillas on the grill or in a skillet. Fill each tortilla with sliced grilled chicken, green chiles, and a few slices of avocado. Top with pico de gallo and serve with black beans and avocado poblano salsa on the side.
