Prepare the Mahi-Mahi

    Season and Cook Fish

    Rub the mahi-mahi fillets with blackening seasoning. Heat a skillet over medium-high heat, add a bit of oil, and cook the fillets for about 3-4 minutes on each side until cooked through and blackened. Remove from heat and let rest.

Make the Mango Salsa

    Combine Salsa Ingredients

    In a bowl, mix together diced mango, red onion, chopped cilantro, and lime juice. Set aside.

Prepare the Cilantro Lime Rice

    Cook the Rice

    In a saucepan, bring water to a boil. Add the rice and salt, cover, and reduce heat to low. Cook for about 15 minutes until the rice is tender. Remove from heat and stir in chopped cilantro and lime juice.

Make the Roasted Red Pepper Sauce

    Blend the Sauce

    In a blender, combine roasted red peppers, minced garlic, olive oil, salt, and pepper. Blend until smooth and adjust seasoning as needed.

Assemble Tacos

    Build the Tacos

    Warm the flour tortillas. Flake the blackened mahi-mahi into pieces and place on each tortilla. Top with shredded cabbage and mango salsa. Drizzle with roasted red pepper sauce.
