Egg Rolls
Method
Preparation
- 1
Prepare the Filling
In a large mixing bowl, combine the shredded grilled chicken, corn, black beans, Monterey Jack cheese, and BBQ sauce. Mix until well combined.
- 2
Fill the Egg Rolls
Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Place about 2 tablespoons of the filling mixture in the center of the wrapper. Fold the bottom corner over the filling, then fold the sides in and roll up tightly. Seal the top corner with a little water.
- 3
Fry the Egg Rolls
In a large skillet or deep fryer, heat vegetable oil over medium heat. Once hot, carefully place the egg rolls in the oil, a few at a time, and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
